Tip: Which plum for what? The”blues”come as prunes or plums on the market. The difference is that plums are rather round, have a soft flesh that is juicy and sweet, but does not always dissolve well from the stone. They are good for cooking and baking. The plums on the other hand are elongated – oval, firm and good stone dissolving. They are ideal for baking, cooking and for a Mus.
The classic plum cake: Unbeatably delicious
The ingredients for about 20 pieces
- 500g flour
- 1 cube of yeast (42g)
- 100 g of sugar
- 120 ml of milk
- 1 egg
- 75 g butter
- 1.5 kg of plums,
- 1/2 teaspoon cinnamon
Put the flour in a bowl and make a bowl in the middle. Dissolve the yeast and 20 g of sugar in 5 tablespoons of lukewarm milk, add to the dish and mix with the flour from the edge. Covered for 15 minutes. Then add egg, 60 g of sugar, the melted butter, about 100 ml of lukewarm milk and a pinch of salt and knead until smooth. Leave the yeast dough covered in a warm place for about 30 minutes.
Wash, halve, stone and quarter plums. Knead dough again, let it rest briefly and roll out 30 x 40 cm. Then place it on a sheet of baking paper and form a small margin. Let rest for a short while and cover with plums like a tile.
Mix 2 tablespoons of sugar and cinnamon and sprinkle with the plums. Bake in preheated oven at 200 degrees for about 40 minutes. Allow to cool and serve with whipped cream.
Plum Tarte Tatin
Ingredients for about 6 pieces:
- 1 roll of puff pastry (270 g from the refrigerated rack)
- 500 g plums
- 1 teaspoon grated organic lemon peel
- 2 tablespoons butter
- 1 packet of vanilla sugar
- 100 g of sugar
- as desired vanilla ice cream or whipped cream
Leave puff pastry for about 10 minutes after packing instructions. Fold the corners to the middle and roll out the dough with the rolling pin (about 30 cm).
Wash, halve and stone the plums. Mix with lemon peel and vanilla sugar.
Melt butter in a large, oven-proof pan (about 28 cm) and sprinkle with sugar. Place the plums close to the sugar with the cut surface down. Lay puff pastry on top and press the edge to the edge of the pan. Pierce several times with a fork. Bake in preheated oven (200 degrees) for about 30 minutes.
Let the tart cool down for approx. 20 minutes and then briefly put it back on the hot plate until the cake can be put into the pan. Then pop down on a kitchen worktop and serve warm with whipped cream or vanilla ice cream.
Plum cake with almond meringue dome
The required ingredients for about 9 pieces:
- 1 egg + 2 egg whites
- 175 g of flour
- 260 g of sugar
- 150 g of finely ground almonds
- 1 1/2 teaspoon cinnamon
- 1 teaspoon Baking powder
- 125 g soft butter
- 1 kg of plums
- 2 tbsp almond flakes
Separate egg. Mix flour, 50g almonds, 90g sugar, 1/2 tsp cinnamon, pinch of salt and baking powder. Knead with milk and butter to a smooth dough. Wrap in cling film and put in the fridge for about 1 hour.
Wash, halve and stone the plums. Roll out the dough in a rectangular shape and place in a small, greased sheet. Press the dough on the edge. Spread the prunes on top and sprinkle with 50 g of sugar. Bake for about 25 minutes in preheated oven to 200 degrees.
Heat up the egg whites and 120 g sugar in a saucepan while stirring until the sugar dissolves. Then beat very stiff with 1 teaspoon cinnamon with the blender or food processor. Stir in 100 g almonds. Put the meringue mixture on the plums and sprinkle with almonds. Bake for another 25 minutes in a preheated oven (160 degrees). Let cool down.
