The required ingredients
- a small pumpkin (best Hokkaido)
- 300 g flour
- 250 g of milk
- 2 eggs
- 2 tbsp of sugar
- 1 teaspoon Baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 pce. Vanilla sugar (optional)
- pinch of salt
- 1 pinch of ground nutmeg
- 1/2 tsp ground cloves
- Vegetable oil or butter

Pumpkin pancakes: The preparation
Wash the Hokkaido pumpkin, cut out and cut in small pieces. Then boil with a little water in a medium-sized saucepan and cook over medium heat for about 10 minutes, until the gourd is soft. Drain the water afterwards.
Add the boiled pumpkin pieces to a booth or into a deep bowl.
Mix the finished mass with the eggs, the sugar and some vegetable oil.
Place the flour in another bowl and mix with the remaining dry ingredients – salt, cinnamon, nutmeg, cloves, vanilla sugar and baking soda.

Take care that no lumps are formed when stirring!
In a coated, greased frying pan, bake the pancakes one at a time using a full trowel of pancake dough for each piece.
Instead of wheat flour, you can also use spelled or oatmeal
After the first bubbles form on the upper side, turn the pumpkin pancakes with a pans turn. The baked pancakes can be additionally garnished with some butter and stored for a few minutes in the oven at low temperature.
