Vegan cookies – baking vanilla kipper
Simple recipe for vegan vanilla crisps
for a full baking sheet; Baking time approx. 15 min.
- 250 g flour
- 200 g vegetable margarine
- 100 g of ground almonds or hazelnuts
- 60 g sugar / brown sugar
- 1 pinch of salt
- 1/2 teaspoon grated organic lemon peel / orange peel
- 100 g of powdered sugar
- 3 pck. Vanilla sugar

And now it starts!
Heat the margarine lightly in a saucepan until it becomes liquid. Add in a bowl with the sugar and stir well with a whisk or whisk until you get a frothy mixture.
You can also mix the ingredients right away, but then stir them for longer
Put flour, ground almonds, salt and grated lemon peel in another bowl. Mix the ingredients together. Pour the warm, liquid margarine over it and knead for about 3 minutes to a uniform dough.
Wrap the vegan vanilla dip dough in cling film and refrigerate for half an hour. In this way, the vegan cookies do not become brittle. By the way, this applies to all cookies, including non-vegans.
Cut the cooled dough into pieces about 1 cm thick. Make a small ball from each piece and then a vanilla croissant each.
You can determine the size of the vanilla kipferl yourself
Preheat the oven to 180 degrees. Lay out the baking sheet with parchment paper and spread the vanilla crescent on top. Bake for about 15 minutes until the vegan cookies turn golden yellow.
You can also master the typical forms of vanilla kipferl directly on the baking tray
During this time, mix the powdered sugar with the vanilla sugar in a wide bowl. After gently cooling, roll the vanilla kiwi in it or sprinkle it liberally… Done!
