Have you tried already quinoa? This valuable plant is also known as Inca – or Peru rice. For 6000 years, quinoa is an important, indispensable part of the food of peoples in South America. Not only the seeds of the plant are eaten, but also their mineral-rich leaves, which are ideal for salads are. Quinoa summer salad after South American art

1 1/2 cups quinoa seeds
1 tsp salt
2 cups corn kernels
1 cup chopped basil leaves
1/2 cup roasted red peppers
1/2 cup diced red onion
2 TBSP olive oil
3-5 EL fresh-squeezed lemon juice

How is it done:

Thoroughly rinse the quinoa grains with cool water and then drain. Then the quinoa together with the salt and 3 cups water in a medium-sized saucepan. Bring the water to the bubble and cook it on a higher flame on you. Cover and let simmer it on low flame for 5 minutes. Stir the corn and wait until the water is completely absorbed. Allow the mixture to cool and fill it into a salad bowl. Swing with a fork right through until the quinoa is airy. At the end you just stir the Basil, the peppers and the onions. Round off the summer salad with olive oil and the lemon juice and enjoy!

Curry Apple quinoa salad

1 cup almonds (sliced)
1 cup quinoa
1 tsp honey
1 TBSP onions (chopped small)
1 tsp curry powder
1/4 Teaspoon coarse salt
2 TBSP lemon juice
freshly ground pepper
2 TBSP olive oil
2 Tablespoons dried currants, raisins or red cranberries
2-3 apples (sliced thin)
on request, 1/4 cup chopped mint leaves

How is it done:

Roasting you first the almonds approx 3-5 minutes in a small pan over a medium flame. If these are brownish, are set on the side on a plate. Bring 2 cups water and 1 cup of quinoa to the boil and let the liquid about 10-15 minutes boil until the water is completely absorbed. Let then the quinoa to cool. For the dressing whisk together the honey, the onions, the curry powder, lemon juice and black pepper in a bowl. Further stir and stir the olive oil. At the end, you need only the quinoa to stir in the Apple slices and dry fruits. Complete the salad with toasted almonds just before serving. The good news is, you can keep this salad for 3-4 days in the refrigerator.

Blueberry mango-quinoa salad with lemon and Basil

1/2 cup quinoa grains
1 cup water
1/2 cup fresh blueberries
1/2 cup ripe diced mangoes
1/2 cup diced cucumber
1/2 TBSP dry cranberries
1 1/2 Tablespoons extra virgin olive oil
2 TBSP lemon juice
1/4 Teaspoon grated lemon zest (untreated lemon)
10 basil leaves chopped small
Salt and pepper

How is it done:

Give the quinoa and water in a medium-sized frying pan and bring to a boil. Cover and let it cook for you for 15 minutes on medium flame. When the water is completely evaporated, take the quinoa from the stove and let cool down. During the Köchelns, give the fruits and cucumbers in a bowl and place it in the refrigerator. Then stir in the olive oil, the lemon juice, lemon zest, salt and pepper together. Add the dressing to the quinoa and just before serving, sprinkle the basil leaves on it so that they are not dark.
